Celery and Lime Espuma
Ingredients
125ml water
50ml Lime Juice
4 Egg Whites
6 dashes Celery Bitters
Equipment
Hand blender or food processor
Cocktail siphon/ ISI Whipping Canister
Method
Separate the egg whites from the yolks and mix with the other ingredients until well blended.
Pour blended mixture into a cocktail siphon
Secure the siphon and add a nitrous charge; Charge and shake.
Additional nitrous charges can be added when the first is exhausted, ensuring to re-shake the mixture with each new charge.
Store chilled.
