Celery and Lime Espuma

Ingredients

  • 125ml water

  • 50ml Lime Juice

  • 4 Egg Whites

  • 6 dashes Celery Bitters

Equipment

  • Hand blender or food processor

  • Cocktail siphon/ ISI Whipping Canister

Method

  • Separate the egg whites from the yolks and mix with the other ingredients until well blended.

  • Pour blended mixture into a cocktail siphon

  • Secure the siphon and add a nitrous charge; Charge and shake.

  • Additional nitrous charges can be added when the first is exhausted, ensuring to re-shake the mixture with each new charge.

  • Store chilled.
