Fennel Syrup

Ingredients

  • 1 Large fennel bulb (Tip and core, 300g)

  • 500ml Water

  • 75ml Honey

Equipment

  • Chopping board and knife

  • Small saucepan

  • Fine sieve

  • Sterilised bottle

Method

  • Dice fennel in roughly 1inch pieces and place in a small saucepan with cold water and honey.

  • Bring to a boil, then reduce the heat and simmer for 25mins.

  • Strain through a fine sieve into a sterile bottle or container and chill.
